Feast
Kilo of floury spuds ( floury v important )
400 gms plain flour
2 eggs
Salt

Make a volcano of flour and pop eggs in the crater with salt. Add finely mashed potatoes and work into a dough. It gets quite sticky so need to flour the table. It needs to be like bread dough.
Cover with cloth and take handfuls at a time and roll with fingers into a thin snake. Cut into little pillows then press and flick these off a good fork to make curly shapes. Cook in boiling water untill they float to the top.
The sauce was gorgonzola, compte, wild mushrooms ( they went well with cheese ) parsley, garlic oh and a leek.
